My favorite quick and simple meal is this pork San Choy Bow. They are also known as yuk-sung and are Chinese minced pork served in lettuce cups. These are quick and easy to make. They’re also delicious hot or cold.
These Chinese lettuce cups are trendy. These Chinese lettuce cups are also known as san-choi-bao, sung-choy-bau, and many other spellings. Whatever you call it, the meaning is identical.
Why We Love It
This recipe is for pork San Choy Bow but can be made with ground turkey, ground beef, or ground chicken. You can use whatever you have available.

Sesame Oil is found both in the Asian food aisle and the sauce aisle of most supermarkets. This oil is flavored and scented with toasted sesame seeds.
Onion Use brown, yellow, or even white onions.
Fresh ginger and garlic I prefer the new stuff, but you can also use ginger or paste found in the vegetable section at most supermarkets.
Chinese Five-Spice is a mix of Chinese spices available at the supermarket.
Pork mince – Use an 80/20 mix of meat and pork. If you prefer, you can use lean minced pork. You can also use beef, chicken, or turkey mince.
Gluten-free soy sauce — substitute Vegemite, Vegemite, tamari, or coconut aminos for the perfect umami in Chinese cooking.
Spring Onions and Cilantro are essential to me, but if coriander is not your thing, you can use chopped flat-leaf parsley or fresh bee sprouts.
Lettuce — butter, cos (romaine), Baby Gem, or Iceberg lettuce. Wraps can be made with any lettuce. You can substitute silverbeet, witlof, or cabbage leaves in a pinch.
How To Make Yuk Sung
Step 1: Heat the sesame oil over medium heat—step 1. Add the onion, and sauté until soft. Add the garlic, ginger, and five-spice. Sautee for 1 minute until fragrant.
Step 2. Step 2. With a spatula, break up the mince. The mince should be fried in a pan until golden brown with crisp edges. (Turn or stir the meat every minute to allow the heart to brown and become crispy).
Step 3 Add soy sauce to the stir fry and mix through.
Step 4 Fold through the green onions. Pour into lettuce cups. Add lime juice and fresh coriander to the salad.
Variations
This recipe for san-choy-bow can be varied in so many different ways.
Vegetarian San Choy Bow – replace the minced pork with finely chopped mushroom. The combination of onions and mushrooms is delicious in a vegan lettuce roll.
Make it saucy – Some people love to dip their lettuce in a sauce. Teriyaki Sauce or Sweet & Sour Sauce are also good choices. Nuoc cham is a good sauce (that’s not Chinese).
Additional garnishes include roasted nuts (for crunch), fresh bean sprouts, water chestnuts, toasted Macadamias, or any pickles.
Protein Make beef lettuce cups or shrimp anchovy bow. You can also make ceviche or fresh fish lettuce cups. Serve with my incredible protein chips on top.
What is the difference between San Choy and Yuk Sung Bow?
The two are identical. Pork mince is traditionally served in lettuce cups. While some ingredients may differ from one recipe to another, the dish is still the same.
Can I make vegetarian suk sung?
Yes, you can. You can swap the mince with any finely chopped or riced vegetables. Use firm tofu instead of pork mince.
Can I freeze the San Choy bow?
You sure can. Freeze leftover mince in an airtight jar. You can pack it in a lunchbox to defrost. However, the lettuce cups can be frozen.
