How to Melt Chocolate Chips

How to melt chocolate in a microwave

Microwaves are great for melting small quantities of chocolate (1 cup or less). You run the risk that your chocolate will burn if you use a more significant amount.

Instructions on microwaving chocolate wafers or other confectionery products are on the packaging. Most likely, you’ll have to adjust the power to prevent overcooking. Use a bowl that is microwave safe for better heat dispersion. Glass works well for this.

How to Melt Chocolate on a Stove

Double boilers are one of the best methods to melt candy wafers and chocolate. Double boilers melt chocolate using hot steam instead of flames.

Place a small pan filled with water (about 1 inch) on the stove. On the stove, place a small saucepan filled with water. Place the chocolate in a heatproof bowl more significant than the saucepan’s opening. (Your bowl should not touch the water in your pan.

Increase the heat to medium-low. The steam that rises from the boiling water will melt the chocolate. It is ideal for large amounts of chocolate (up to 1 cup) since it is almost impossible to overcook or burn it.

It would be best to be careful not to let the steam come into contact with the chocolate. Water can cause chocolate to seize and become unusable. If you see a lot of smoke rising from your bowl, lower the temperature.

How to thin melted chocolate

You can thin out melted chocolate and candy wafers if they are too thick to dip or drizzle.

The easiest way to dip is with Dipping Aid. EZ Thin allows you to control the consistency of your chocolate or Candy without changing its overall appearance (it will remain shiny and set correctly). Add EZ Thin to your Candy after it has melted.

If you do not have EZ-Thin on hand, you may also use a solid white vegetable butter, starting with a little and adding more as necessary.

Unless otherwise instructed, we don’t recommend using any of these ingredients to thin your chocolate. These ingredients may cause the chocolate to seize, making it unusable.

Some decorators suggest using coconut or vegetable oil to thin chocolate. We caution you against this, especially if your Candy is Candy Melts. These ingredients can alter the texture, causing the Candy not to set correctly.
